Easy yummy breakfast...
Brioche Cinnamon Roll Bread
Tried this recipe recently:
It worked perfectly. You make the dough the night before and then just get up in the morning and hiff it in the oven. Can't get any fresher than that! I made the full recipe - 2 loaves.
For two people one is plenty, but I froze the other one after breaking it up a bit, so now we've got decadent afternoon tea options as well.

Rambuttans
Here's a cute idea I found on the net for how to use these as a topping for pancakes or waffles (could use canned or fresh lychees if you can't get these). Tropical flavours!
7 whole rambutans
1 tsp vanilla essence
½ cup coconut milk
3 tbsp unsweetened shredded coconut
1) Dry roast the shredded coconut in a pan on medium heat for about 30 seconds till the coconut shreds turn golden/brown and release a wonderful aroma. Set aside.
2) Cut the rambutans in the middle and peel the skin. Remove the pit from the fruit centre.
3) Combine coconut milk, rambutan and vanilla essence in a blender and blend the mixture for about 20 seconds. You want to have rambutan pieces in the sauce so if they have turned into a puree then add small pieces of cut rambutan to the pureed sauce.
4) Serve with pancakes or waffles.
5) Sprinkle the dry roasted coconut on top.

Our favourite granola...
Granola Recipe
2 tbsp vegetable oil
125 ml maple syrup (or honey, golden syrup, brown sugar/water syrup- or 100 ml and 1/3 cup brown sugar)
2 tbsp honey
1 tsp vanilla extract
300g rolled oats (2 cups)
50g sunflower seeds (1/3 cup)
4 tbsp sesame seeds
50g pumpkin seeds (1/3 cup)
100g flaked almonds (2/3 cup, or other nuts)
100g dried berries (2/3 cup, eg apricots, dried strawberries)
50g coconut flakes or desicated coconut (2/3 cup)
Method
Heat oven to 150C/fan 130C/gas 2. Mix the oil, maple syrup, honey and vanilla in a large bowl. Tip in all the remaining ingredients, except the dried fruit and coconut, and mix well.
Tip the granola on to a big non-stick baking tray and spread evenly. Bake for 15 minutes, then mix in the coconut and dried fruit, and bake for 10-15 mins more. Remove and scrape onto a flat tray to cool.
Serve with cold milk or yoghurt. The granola can be stored in an airtight container for up to a month.

Where to get bagels in Honiara?
Sorry to say, there are no bagel bakeries around here...
Oh well, have to make them myself!
Here's the process:
Dough recipe:
(Makes 8)
3 tsp yeast
1 1/4 cups warm water
2 tbsp. honey
1 1/2 tsp salt
1 cup wholemeal flour
2 tbsp. gluten flour
2 cups high grade flour

After making the dough, form the rings and let them rise for 10-15 minutes.
Place 3 at a time in boiling water and cook on both sides for 1 minute each.
Cover with an egg wash and poppy or sesame seeds.
Bake in a 220 degrees C oven for 10-12 minutes.
| Breakfast is served! This is filled with cream cheese mixed with sundried tomatoes and fried bacon pieces. YUM! |

Banana bread
Of course we have loads of bananas here, but I'm still working on perfecting banana bread.

This post was supposed to be all about the banana bread.
But our local store had imported peaches (tiny little ones) that we
couldn't resist, so to make them taste more special I roasted them.
(Toasted the banana bread, then a "bit" of butter...)

Breakfast fruit salad
Decided not to dump all this beautiful fruit in a bowl this morning - mangos, star fruit, kiwis and bananas. Then homemade yoghurt mixed with homemade guava jam...
