Soursop Gelato


This unusual looking and flavoured fruit makes spectacular icecream. 

First had to get all the loads of pips out of it. A serious business involving hands. Forget trying to be all proper with a knife or anything. I did all the research on the Internet about it and a lot of people were very quiet about it... Just said it was difficult! My favourite people were the ones that said get in there with your hands and after taking out probably 100 pips I agree wholeheartedly!

I blitzed the flesh in the blender and added a bit of lemon juice. You can add sugar if you want. About 2 cups of pulp.

Then I just made an "icecream custard". Once it was cool mixed in the pulp then let it get really cold in the fridge overnight. Put the mix in the icecream maker the next day and voila!

Tropical flavours


Pan fried fish with papaya and mango salsa

Salsa
1/2 cup chopped papaya
1/2 cup chopped mango
2 tablespoons chopped red onion 
1 tablespoon chopped Thai basil 
1 small clove garlic chopped 
2 teaspoons finely chopped ginger 
1/4 cup olive oil 
2 tablespoons Lime juice 

Mix first six ingredients in a bowl.
Then when ready to serve, add olive oil and 
lime juice and season with salt and pepper.  
Serve on cooked fish. 


Just chilling...
